Caught the old-fashioned way in Las Rias Gallegas, once on our premises, the clams are stored in seawater tanks to get the sand out naturally. Once steamed, they are shelled and very carefully washed in semi-salted warm water to remove any impurities. A Galician delicacy for exquisite palates.
